👤A knife collector has used several sharpening systems over the years. The lansky and the wicked edge are included. I've used the Edge Pro as well. I've spent about 2 hours with the system on 2 different blades. As I gain more experience with the system, I will update this initial thoughts. Can you get a knife sharp with this system out of the box? Answer is mostly. It depends on what you mean by "sharp". A knife cutting printer paper is the minimum that I want. It's possible that dull knives do that as well. If you are someone who has no idea about knife sharpening, you would be happy with this system. Maybe you like to have your hunting knife cleaned before the season starts. My level of sharpness is at a high standard, having used the most superior system on the market. I didn't get the sharpness I wanted out of this system in 2 hours. I tried different angles and different steels. The edge was given a decent edge by hand stropping the knife. The edge of the paper is dull. There is a flat on the edge. I made sure the knives were clean. The question is, why is this happening? It is a bit cold. I didn't use an angle finder. The Wicked Edge is a better system, but I never used one. I winged it and used it as intended and I think there is a repeatability issue that is causing knives to be dull. I'm not sure how many people use their phones or an average sized angle finder. On one side of the clamp, it is not flat. Unless you have a small angle finder, it's not possible to accurately measure a small blade. A cell phone won't work. Period. It won't sit on the surface of the clamp. A phone is too large if it is only one side. The lack of repeatability wasn't really expressed on the edge, other than it being "dull". The edge width was constant. The edges looked the same width. I'm not sure what's going on, but if I can't get a knife razor sharp, something is up. The system seems to be geared towards fixed blades. It is. It will work for folders, but it will cause problems. The clamp is not designed for small folders. You can get clearance to work if you use the corner of the blade as a guide. This isn't a problem. It's fine, but could be smaller. The stones don't really do anything. They're fine. They get the job done. They struggle a bit for good knife steels. They can abraid and dust easily. They're also brittle. I broke the 120 grit when I put it into the system. It seems like a 1000 grit. It feels coarse. It's obvious that you won't be getting a mirror finish on this system, but it's worth noting. 99% of the time, mirror finishes are worse than a toothy edge. If you're new to the scene of sharpening, here are some basic tips to help you out. Light to modest pressure is what these are used for. No need to use high pressure. Going back and fourth is acceptable. Don't do circles, they just produce an awkward finish. A lubricant is used. The water can be used to keep the stones from getting stuck. That is one of the main points of using a lubricant. When a stone gets stuck, it's useless. You should clean the stones with a rag as you sharpen them. A better edge will produce more stone life. The downside to using a lubricant is that it can get into blade pivots. It is important that you know this. A knife will never be sharp if it isn't sharp in the profile stage. You should re-profiling the edge to meet the new angle you are honing at. All material should be cleaned up. From start to finish. Use a marker. The blade of a knife will never be sharp if it does not feel sharp during this stage. The edges from the Wicked Edge system were very toothy and coarse. I knew the system was malfunctioning. I spent most of the time with this system trying to get a sharp edge, but I didn't get there. I moved on to the rest of the stones and the result was the same: dull with a fine edge. Thats how she does it. I don't regret the purchase. A good starter system. The system is versatile and you can use any stone. Guys were using files with them. I want to get better stones and a small angle finder to try and sort out this issue. I considered trying to flip the blade instead of index it. I want to see if I have better results. I'm amazed that so many people said it works for them. I used this tool for 30 minutes on a paring knife. I swear it was duller than when I started. It wouldn't cut a tomato if it wasn't squishing it. A couple of real or synthetic stones and a little work is all it takes. The afternoon after I received it, it was already packaged up for return.

I've been using Japanese sharpening stones for years but it's taken me a bit of time as I use two styles of stones to hone the 5 kitchen knives I use every day. I sharpen my knives. I decided to buy the Work Sharp E2 Mini Kitchen Knife Sharpener after reading several reviews. The other models use an abrasive belt. I like the simplicity and compactness of it, but I was a bit skeptical about the sharpening ability and how long the blade edge would hold. I was pleasantly surprised the blades stayed sharp for a week. It's quick and easy, but I continue to sharpen weekly. I received a pair of replacement abrasive discs from the manufacturer after I registered my E2 Mini. I don't know how long the discs will last. The replacement abrasive discs are not available on Amazon. The manufacturer's website only shows replacement abrasive belts for their other models. I inquired about the price and availability of replacement discs on their website. Have yet to hear back from them. Here's an update. The rating was changed to 5 stars. After inquiring with the manufacturers of the Work Sharp Culinary E2 sharpener, I heard back from them. They said the E2 was a new product and they had not updated their website about replacement discs. They sent a pair of discs. I sharpen my knives. I have learned how to keep a sharp edge on them. It's easy to use. I have been using the sharpener for over three months. The discs are sharp. Have not had to replace them yet.

The whetstone method produces fantastic results, unbeatable really, but is extremely time consuming if done properly, and you will experience an impressive finger injury at some point if you do not have proper technique or are not paying. The Worksharp E2 seemed to be the best of the "cheap" sharpeners, so I settled on it. I think it's a good value for the money. The machine seems well engineered for this price category. The results are okay, but not spectacular. My knives are sharper than ever. They cut into vegetables and fruit with ease, and do an okay job with meat as well. The guide is not great. If you own both western and eastern kitchen knives, you are out of luck. The "scissors guide" is smaller than the tip of my finger, and useless, because attempting to sharpen scissors on this machine resulted in something akin to a pair of conjoined butter knives. My favorite party trick was to cut a paper towel in half. That sort of thing is not going to happen with knives that are sharpened by this. If you want to get a truly honing edge, you'd want to grind at both fine and coarse grits, and the E2 doesn't allow that. You could use the much more expensive E4 sharpener.

The sharpener worked well when I used it correctly. I decided to order a sharpener that works for both Asian and Euro knives. I have an electric sharpener that has good reviews, but these hand sharpeners seem to work more effectively, and they are much more useful. I tried out the sharpener on some of the steak knives we have. I could not have cut my finger on them. These knives were razor sharp and passed the paper test, even though they took 20 and 10 turns on the Euro/American slot and polishing slot, respectively. I used the Asian slot and the polishing slot on the most used Shun knife to try out the sharpener. The knife was restored to its former state. The electric one seems to do a worse job of sharpening knives than this one. You need to keep in mind that you need to put 4-5 pounds of pressure on the knife as you sharpen it, if you decide to get this sharpener. The one-directional motion used for most sharpeners is not good for sawing. If you use it correctly, you will be able tosharpen your dullest knives. I have been using this sharpener for about 2 years, and it still sharpens my knives as well as the day I bought it. I know that some people prefer sharpening stones or rods, but you have to make sure you use them at the right angle. If you don't, you can damage the knife's blade. I only use the correct slot for the type of knife I am honing and polishing when using this knife sharpener. I have to be careful when sharpening a knife. I don't cut myself. 👤We had some smaller paring knife types that had gotten dull over the years. Even though I tried a manual sharpener, it didn't change the sharpness for long. The knives of ours were nearly razor sharp, thanks to the electric sharpener. If you can hold the knife steady and use a steady, no pressure added, pull, then this product will razor sharpen all your knives. If you don't pay attention to what you're doing, the sharpening angles won't work, and you can damage a blade if you put too much pressure on it. I used some sharpening oil on a cloth to clean the blades before sharpening them, and noticed that the blades weren't so rough after using the oil.

This machine is a great addition to my kitchen and I would not hesitate to buy it again. I ran my knives through the stage 3 a few times, hit those with my ceramic hone, and marveled at how much sharper the blade was. If you're not sure if the machine is worth the money, or if you're not sure if it will work, stop now and order it. It is very good. If you want to enjoy the new edge on your old blades, you should get this machine, it will save you hours of work and allow you to wet grind all of your knives.

If you have an established edge, the sharpie technique would work just as well. The pocket knife was held firmly by the clamps. You can flip the knife over and back with a push of the button on the back of the case. If I could make any changes to the sharpener, it would be: 1 - Make the abrasives a little wider. It's easy to roll the abrasive plate at a 1/2 inch wide. The abrasive rod fit needs to be tightened. There is a small amount of play in the rod when moving the abrasive holder. The blade flip push button should be easier to use. I had to use both hands to depress the button out of the box because it would loosen up over time. The design of the sharpener, ease of use, and affordable price make it a great choice.

I had a bit of trouble at first, but once I checked the manual, I had sharp knives. You need to know when to use slot 1 and when not to. If you don't have a good burr on slot 2, you won't be able to get to slot 3. You will probably dislike this device if you don't pay attention to the simple things. I found that I could take an old dull knife and use it to pass the paper and tomato tests in less than 2 minutes. America's Test Kitchen is right about the sharpener.

I used the ATK recommendation as the main point of reference for this sharpener. Despite reading some negative reviews, I thought there was a chance I might get a faulty unit.
