Every junk knife has a stamped "surgical STAINLESS" on it. A knife that doesn't rust when used is probably not a great knife, it will be hard to sharpen, and won't have good edge retention. If you don't take care of them, they will rust. Put your knife away after you used it. If used properly and maintained, these have excellent edge retention. You can learn to use honing steel before you use your knife. The serrations on the edge of the blade will be realigned to keep it sharp. Don't cut on glass, stone, hardwood, or cheap plastic boards. Get a bamboo cutting board. Your blade will stay sharp for a long time. Don't put your knives in the dishwasher. They are being blasted with abrasive soap and minerals and then subjected to extreme heat and humidity. This will ruin your knives. Get a long handled nylon brush and wash it with hot water and soap. If you use it the narrow way, it can fall over easily if you are not careful, since it comes with 2 metal weights that attach to the bottom base. I have wedged my coffee machine between the food processor and the fridge so it's not bad. I have more space now than I did with my old wooden box knife set. I like that the box is plastic and the top part is removed so that it can be cleaned from the inside, something I could not do with the old wooden box one. The old wooden box that was used to hold the knives became damaged from being used time and time again, it looks rotted, you can see jab marks, and who knows what was growing in the inside of those slots. This box is easy to clean, can fit into tight places, and comes with the right knives for all of my cooking needs, so I don't have to worry about them sticking out and taking up all of the counter space. We use a couple of Chef knives in the $350-$450 range each and utility kitchen knives in the $150-$250 range as our daily home kitchen knives and have high-quality steak knives for our personal use and those times we want to impress. Guests keep their paws off our good knives when they want to cook, so they were specifically bought a set of knives to use. We have been in the kitchen before, we have knives and their proper care, and we take pride in our tools. We are down a steak knife that was accidentally dropped by a guest and broke into 3 pieces. Know how that is possible. The tip broke into 2 pieces. The tip of the steak knife broke when it was put back into the block slots. The tip broke off the Chef's knife and put it back into the block. I was able to make a sharper point with the help of 2 other steak knives that bent at the tip. I have contacted Dalstrong several times over the past month and have yet to hear back from them. I shouldn't be surprised at the quality of the knives, but we thought we'd give them a try, given the great reviews. It's a waste of money. We have a knife set for guests that are broken and missing. This set stays on the kitchen counter because it looks great, but it's useless to us and we will donate it to charity because it's embarrassing. I don't think they are true damascus steel because the pattern on the blade part is the only part that extends into the tang. Damascus steel's are dull in color and not as shiny. They are still very good quality and cut very well. I have had to relearn how to cut in the kitchen as a mistake with these would not be forgiven, I believe it would go through your fingernail where other blades would stop. I was led to believe that they were thinner than they are, but they are still durable and not "flimsy" at all. I highly recommend it. If on sale.
